I’ve always been one to go for quick meals, even before having a baby on my hands. Now that I’ve got even less time with baby here(and no free hands) and have been trying to eat a more plant based diet, I thought I would share this recipe with ya’s. Its one of my faves and is so easy you’ll barely need five mins to make it.
I’ve done the simple version here and want you to know there’s so many things you can add to this salad to make it your own. Things like apple, mint, oranges, cider vinegar, walnuts, seeds, etc can take this salad to the next level. Don’t be afraid to experiment with your salads, you would be surprised at how well fruits and veg can come together tossed around in some dressing.
Fennel is very aromatic and flavorful and can sometimes be hard to pair with other herbs and veg because of its unique taste(its got a distinctive licorice flavor and fragrance), but its known to have huge health benefits. It’s packed with Vitamin C, Potassium, Folate and a substantial amount of antioxidants. These are only a few of the benefits of adding fennel into your diet, so with that being said lets get to it.
Here’s how I make it.
1 bulb of fennel, sliced
1-2 handfuls of cherry tomatoes sliced in half
1 bunch of parsley, chopped
1-2 Avocados(depending on how much you like)
Pinch of salt
You guys are going to love how easy this is to make. Basically, you add the sliced fennel to a bowl, add the tomatoes and parsley and cut up as much avocado as you want(1-2 as suggested), I like two because I love Avocado, add it to the bowl and drizzle it with olive oil and lemon( I also like more lemon, so you can use the whole thing or just half depending how you like it). Put some salt and pepper on it, mix it up and you are done. Voila, a super tasty and healthy lunch or side salad.
